We're all for wacky food concepts, and the new Proef restaurant in Amsterdam caught our eye. The Amsterdam location opened last month, joining a sister restaurant in Rotterdam, and both Proefs are helmed by food designer Maria Vogelzang. During the week, the restaurant serves as a food design studio, and on weekends ordinary folk are allowed to come in and sample the food. Vogelzang goes beyond thinking just how the food will look on the plate- if there even is a plate. She thinks about how the food will make you feel (sleepy? Energized? Calm?) as well as food in different social contexts. She has created an all-white funeral meal, and when providing catering for Rotterdam's World War II museum, she used ingredients that were available during war time, unleashing a flood of memories to some of the veterans.
